My thinking (After I'd already typed a paragraph before realizing this) is that since the Killing Curse does not destroy a soul, merely just ripping it, he only just created another Horcrux by accident, but the rest of his soul was still intact (the part, at least, that was not already in a Horcrux). Recall Hermione saying that a Killing Curse would not destroy a Horcrux? That's why he was still alive, I believe, since he had his Horcruxes, his soul might have just passed onto the next realm, like the others that we see. The number of them was just his obsession with making sure that he was immortal and that he just wanted to have seven pieces of his soul in different spots, just in case.

The way I see it is that Voldemort originally intended for there to be only 7 pieces of his soul. However, upon attacking Harry (who was under his mother's protection at the time), an eighth, unstable piece broke off from the seventh (Voldemort's) and lodged itself into Harry.
And technically, if we count Horcruxes as soul containers that Voldemort willfully created, then we cannot count Harry as a Horcrux, as I believe Tommy boy had no intention to let Harry live that fateful night.

I think that there were the six horcruxs, and voldie himself before he attacked the potters.
then when he attacked them, his body was destroyed, but because of the horcruxes, he did not,leaving him as a floating soul thing which possesses people, aka quirrel. so there was then harry locket diadem nagini diary cup and the ring. plus the left over of his soul. making the seven horcruxes...

I thought he had five horcruxes to begin with, tried to kill Harry but it backfired making him a horcrux too, then realised after using Nagini to kill Frank Bryce that she was useful, and made her into a horcrux too.

Mm. Dumbledore mentions somewhere (King's Cross, I think) that Harry was supposed to be the kill that made the sixth Horcrux.

Yeah, Dumbledore said that because Voldemort made Horcruxes after some significant death. Like he probably made the ring a horcrux after killing his father, the one who didn't care that someone was pregnant with his son and just ran off back to his parents.
